[Toxic metals in animal tissues and milk - evaluation of the risk]

Analysis of the content of toxic elements in the examined animal tissues indicated the lowest levels Pb, Cd, Hg and As in the majority analysed tissues. The higher concentration the toxic elements confirmed in the kidneys and liver. Consequently, these organs are particularly useful for the evaluation of the risk to humans and animals from the environmental sources. Moreover, a substantial participation of meat and processed meat products in the human diet indicated a need for broad examinations involving the etimation of the contaminations of the environment, which lead to the limitation of food and feed contamination
