Comparative technological and biochemical investigations of grain in Bulgarian durum wheat varieties

In 2002-2005 a trial was conducted in the experimental field of the Agricultural University - Plovdiv. Tested were some Durum wheat varieties: Zagorka, Beloslava, Vuzhod, Yavor and Progress (standard). The experiment was carried out according to the block method in four replicates. The size of the plots being 15 m. The main aim was to establish the most suitable Durum wheat varieties for the environment of Plovdiv region. It was established that variety Vuzhod produced the highest yield 4613 kg/ha with 650 kg/ha (16,4%) more than of Progress. Second was Beloslava - 4335 kg/ha with 372 kg/da - 9,4% grain yield more than the standard. Contents of row protein, total and essential amino acids were highest in the grain of Durum wheat varieties Zagorka and Yavor. The gluten content, bread volume and sedimentation value were found to be highest in Beloslava and Vuzhod varieties.
