The experiment was conducted to determine the effect of dietary L-Ascorbyl-2-Phoshate-Magnesium (APM) diet to vitamin C content of the liver, omega-6 and omega-3 fatty acid, and Hydroxyproline/proline ratio of the body and the growth performance of Humpback grouper (Cromileptes altivelis) juvenile. An initial body weight of 2.96 +- 0.14 g fishes were cultured for 60 days. During rearing period fish fed a practical diet supplemented with 0, 25, 50, 100 and 200 mg/kg APM, respectively. Fishes fed these diets times a day at saturation. The result showed that the vitamin C in the liver, omega-6 and omega-3 fatty acids, hydroxyproline/proline of the body increased inproportionately to the concentration of vitamin C in the diet. However, the best daily, growth rate, lipid retention and feed efficiency was found in the fish fed a diet containing 25 mg/kg APM, while protein retention and feed consumption were not significantly different (P less than 0.05) among the groups of fish fed on the diets containing APM.
