In this study three prevalent paddy varieties ( Amol-3, champa and lenjan) in three county ( Mamassani, Firuzabad and Kherame) were selected as test materials and test was performed in years of 1383 and 1384. A split plot design with four replications and Duncan,s multiple range test was used for statistical analysis. Three varieties of paddy and five paddy moisture contents range ( 6-8% , 8-10%, 10-12%, 12-14% and 14-16% wb) were selected as main plot and sub plot, respectively. Paddies were dried under direct sun light. After drying the samples of every treatment were milled at a milling factory and parameters such as percentage of cracked grains before and after drying, percentage of rice breakage, paddy moisture content before and after drying and duration of drying were measured. Results of two years showed that paddy moisture contents had direct relation with rice breakage and percentage of rice breakage decreased with an decreas of paddy moisture contents. Also, paddy moisture contents had indirect relation with cracked grains and percentage of crack increased with an decreas of paddy moisture contents. The most proper of Amol-3 variety paddy moisture contents range for milling was 10-12% (wb). In the paddies of champa and lenjan varieties, the most proper of moisture contents range for milling was 8-10% (wb).
