Rheological properties of flours from bugged-wheat [Eurygaster maura L.; Piedmont]

anglais. The effects of an infestation of wheat bug (Eurygaster maura) in Northern Italy on the technological characteristics of the attacked wheat were investigated. Several parameters and tests were considered (e.g. test weight, hardness, baking test, rheological indexes, and so on). For the bugged wheat, results showed a significant reduction of quality. The parameters mostly affected were the alveographic, extensigraphic, farinographic, and promylographic indexes. Also the baking test showed a negative influence of infestation. Consequence of this fact was a reduction in the commercial value of the wheat
Afficher plus [+] Moins [-]italien. Sono stati indagati gli effetti che un'infestazione di Eurygaster maura su frumento ha avuto sulle caratteristiche reologiche della farina derivata. Pertanto sono stati considerati i parametri e i test più comunemente eseguiti nell'ambito del controllo qualità nell'industria molitoria e di trasformazione. I risultati dei test condotti sul frumento cimiciato hanno mostrato un significativo scadimento della qualità della farina. I parametri più influenzati sono stati gli indici alveografici, estensografici, farinografici e promilografici. L'effetto dell'infestazione ha portato a uno scadimento della classe qualitativa, con conseguente riduzione nel valore commerciale del frumento
