Antioxidant activity and extraction efficiency of anthocyanin pigments in black colored soybean

Physiological activity was measured by isoflavone and DDMP-saponin contents in soybean. The total isoflavone aglycon (daidzein, genistein, and glycitein) contents among black colored soybeans ranged from 974 to 1,987 ppm. High concentration of isoflavone contents were checked at embryo axis part whereas most of total contents were distributed in cotyledon. But it made no difference to isoflavone contents between black colored soybeans and ordinary soybean (Daepungkong), or rather, Daepungkong showed high value of content.
