Low energy jellies for special categories of consumers are specially interesting for not small group of diabetics. The technological procedure for production of special jellies prepared of fruit kinds applying artificial sweeteners, sugar and special pectin preparates was developed. The most appropriate products of the best quality are obtained in the basis of analyses of components responsible for energy value, by sensorial evaluation.
