Sheep milk from the point of view of microbiological quality

The article deals with microbiological quality of sheep milk. Raw sheep milk has to fulfill standard requirements on total bacterial counts and Staphylococcus aureus according to legislation valid in Slovak Republic. The presence of psychrotrophic microorganisms, lactic acid bacteria and enterococci can play the important role. In this work, it is described an importance, presence and factors affecting the occurrence of microorganisms in sheep milk.
