Production of corn chips from feed corn

From developing of corn chips product from feed corn, it was found that the ingredients were whole corn flour, sodium bicarbonate, salt and water. Using 1.5 percent of sodium bicarbonate, the product was the most crispy but its color was dark and 1.5 percent salt gave good taste to the product. The optimum amount of water in dough was 60 percent. The chip was crispy and got highest score for taste and total acceptability.
