When we consider the ecological balance and development, drying or storage of fresh fruit, vegetables and industrial crops is a question of national and worldwide importance. In order to ensure the corresponding technologies, high-consumption installations are needed that, in their conventional implementation, are associated with a considerable consumption of electrical energy and fuel. Extraction and production of these power carriers is conducted with negative consequences that lead to risk for disturbing the nature ecological balance and, in some autors opinions, to irreversible changes in the world climate. In this paper, according to the problems presented, a structure of methods for management of the net savings from solar and free-air energy in drying and storage of products - fruit, vegetables, industrial crops, etc is synthesized. Indices for ensuring of physically-optimum power and matter consumption and keeping the possible minimum energetic level in drying and storage processes are drawn and experimentally tasted.
