Technological and biological uses of Jerusalem artichoke powder and resistant starch

Resistant starch and inulin which is not digested in the small intestine, improve human health, as dietary fiber does. Jerusalem artichoke powder had higher content of crude protein, crude fiber and ash than resistant starch. Jerusalem artichoke powder and resistant starch had different effects on biscuit diameter, but had the same in each of thickness and spread ratio. There was a gradual reduction in the diameter and thickness while, spread ratio had gradual increment with increasing the used materials. Adding 10% and 20% resistant starch and / or Jerusalem artichoke gave biscuits with the best quality. Resistant starch and Jerusalem artichoke (inulin) had the same surface characteristics, crust color and crumb texture, but differ in the rest of their characteristics. Adding 10% of the two materials to the biscuit formula had the same properties of which made of wheat flour only. Using 10% and 20% of Jerusalem artichoke and / or resistant st arch gave biscuit can be acceptable by people useful for their health. Then resistant starch or Jerusalem artichoke until 20% produces biscuits with good physical properties and sensory characteristics. Rats fed on positive diet had the lowest body weight gain and daily body weight gain, while, the highest weights were in rats fed on basal diet. Resistant starch and Jerusalem artichoke diets gave rats their weights lay in between. Feeding hypercholesterolemic diet raised liver weight, while the rest used diets reduced it, fed rats on diet contained inulin had more improvement effects than that fed resistant starch on blood serum lipids and liver functions
