Chemical analysis of twelve promising varieties of sweet potatoes revealed considerable genetic variation among the varieties with respect to proximate composition, protein quality, ascorbic acid content and mineral composition. The variety Sreevardhini contained the highest amount of protein, fat, ascorbic acid, methionine, P,K and MG. IB-90-15-9 and X-108-2 were adjudged as improved varieties for Ca and Fe contents respectively. The variety S-56-2 appeared to be promising with respect to sulphur content. tryptophan content was relatively higher in IB-90-11-1 but did not show significant variation among all the twelve varieties. Calculation of amino acid score indicated that both the essential amino acids-methionine and tryptophan were deficient in all the sweet potato cultivars.
