Average profit from the production of 1 kg beef products during 3 years was 1.93 zloty/kg for beef tenderloin, 0.70 zloty/kg for boneless leg meat, 0.65 zloty/kg for in-bone rump, and 0.55 zloty/kg for flank. Average profitability during the entire study period for products made in the meat plant studied was 7.79 percent for beef tenderloin, 5.06 percent for boneless leg meat, and 6.49 percent for in-bone rump
