The presence of toxic elements (As, Pb, Hg, Cd) and OCP: beta-HCH, gama-HCH, aldrine, dieldrine, eldrine ketone and endrine aldehide, and OPP: tionazine, disulphoton, parathionmetil, chlorpiriphos and parathion was examined in selected samples of wheat, representing the central part of Banat and the central part of Backa (Serbia). The content of toxic elements is determined by atomic absorption spectrometry. Samples for OCP and OPP determination were prepared by extraction according to the modified method (AOAC 970.52/1993) together with the internal standard and identification was done by gas mass detector. According to the measured contents of examined toxic elements in these districts and considering the content of toxic elements, the wheat is safe to use, i.e. measured values were lower than the values prescribed in the National Standards. Preliminary data of OCP and OPP content on wheat kernel surface point at the importance of thorough wheat cleaning before milling with the aim of poisonous matter removal and preparing safe food.
