The content of undesirable metals ions was identified in the wheat grain, bran and flour from the chosen wheat specimen through the method of flameless atomic absorption with relation to the distance from the industrial area. The samples were ground in the laboratory mill Buhler MLU 202. The Fe content determined with flame atomic absorption spectrophotometry whereas Pb, Cd, Zn and Cu were detected through the flameless method of atomic absorption spectrophotometry (Perkin Elmer). The temperatures were: for Pb 1800 deg C, for Cu 2300 deg C, for Cd 1600 deg C, and for Zn 2100 deg C. The undesirable metals ions content was determined after the calibration curve from the standard metal solution. Pb and Cd content is increased in wheat and all parts of the grain in comparison to the values proscribed by the Rules and Regulations. The Undesirable metals ioNs concentration is found to be the highest in the peripheral parts of the grain i.e. bran, regardless of the distance from the industrial area, which imposes a question of how healthy is it to consume whole wheat bread made from the wheat grown in the vinicity of the industrial area.
