[Influence of the biopreparation Bajkal EM-1 containing in high yielder cows rations on milk chemical composition and technological properties]

Three groups of Black-and White cows (the animals of 2nd and 3rd lactation, a medium lactation performance of 6500 kg of milk) were involved in an experiment and had 10 heads in the each one. All the animals had the usual ration and the ones of the 2 and 3 groups were fed additionally by the preparation Bajkal EM-1 at a rate of 50 and 100 ml per a head respectively. The preparation was mixed with a combined feed and applied during a night feeding. The experiment duration was 5 months (from January till May). At the end of the period the lactation performance of the 2 and 3 groups was higher than on the control one by 4.95% and 7.26% respectively. Milk fatness increased by 0.12 and 0.20% and protein content by 0.04 and 0.07%. Casein content in milk did by 7% and 10% respectively. Milk thermal resistance (that is a capability of milk to sustain high temperature effect without protein coagulation) reached 80% of alcoholic concentration (the method of an alcoholic sample). The cheese coagulum was received by brynza production and the one in the case of the trial cows was denser than the one in the control case and formed faster. All the cheese received had high points of their organoleptic properties. The prime cost of the control milk was 6.29 rubles and it was lower by 0.15 and 0.22 rubles for the 2 and 3 groups respectively.
