The extraction of hyssop using the steam distillation procedure and maceration by different solvents (water, ethanol, b-buthanol, ethylacetate) was investigated. The essential oil content was determined in samples of flower + leaves, stems and herbs, collected during different stages of the plant development. On the basis of the obtained results, it was concluded that the highest content of essential oil was for the plants collected in the before blooming stage, namely: flowers + leaves (0.85%, v/V), stems (0.03%), and herbs (0.43%). The content of dominant components was determined by qualitative and quantitative analysis of essential oil. Finally, the extraction kinetics of total flavonoids and phenols was investigated by 60% and 70% ethanol extraction.
