Изменение содержания физиологически активных веществ в процессе хранения многокомпонентных биологически активных добавок

The research of the stability of the most important physiologically active (bioactive) substances during storage of the food additives was made. The deep circidium of Ganoderma lucidum, Lentius adodeus and Laetiporus sulphureus fungi were analyzed. Biochemical content of the multi-component compositions was researched, percentage of proteins, lipids, polysaccharides and carotenoids were measured. The composition of fatty acids in lipids and amino acids in proteins were analyzed also. The research has shown that during 15 months storage of multi-component composition N1, based on 2 fungi species (Lentius edodes and Ganoderma lucidum), the composition of bioactive compounds almost did not change. At the same time, during storage of the multi-component composition N2, based on three species of fungi (Lentinus edodes, Ganoderma lucidum and Laetiporus sulphyreus) there were a decrease in the maintenance of carotinoids content and lipids oxidation, leading to important changes of fatty acids content of composition. On the basis of the composition N1 was made a new food additive named Diamitselan
