Depuis deux ans, le prix de céréales ne cesse d´augmenter sur le marché international à cause d´une forte demande liée en partie à leur utilisation comme matière première dans la fabrication de biocarburants. Ce nouveau contexte régionales basées sur la valorisation de ressources locales.international rend possible le développement de stratégies régionales basées sur la valorisation de ressources locales.Dans ce contexte, l¨objectif de ce travail de thèse consiste à fournir des références techniques et scientifiques à la profession sur un mode d´élevage durable et intégré, basé sur l´utilisation d´une race locale (le porc Créole) et une ressource végétale locale (la canne à sucre).Le premier travail a consisté à mesurer en station expérimentale la valeur nutritionnelle et énergétique des produits de la canne (mélasse, canne broyée, jus de canne)chez le porc Créole. Cette étude montre qu´il existe de fortesdisparités concernant l´utilisation digestive et métabolique des nutriments selon la forme de distribution de la canne à sucre.(cont)

For two years the prize of cereals has kept on increasing on the international market because of a high demand partly dueto their use as raw material in the making of biofuel. As a consequence, the price of feed cattle is increasing. This new international context contributes to the development of regional strategies based on the valorization of local resources. In this context the research work of this thesis is aimed at proving the professionals with technical and scientific references on a farming system sustainable and integrated, based on the useof a local breed _ the Creole pig _ and on a local crop _ the sugar cane.The first work has consisted in measuring in experimental station the nutritive and energy value of the sugar cane products (molasses, ground sugar cane, sugar cane juice) on the Creole pig. This study shows that there are great disparities the Creole pig. This study shows that there are great disparities in the digestive and metabolic use of the nutrients according to the sugar cane for allowance. Furthermore this research shows that the characterization of the ground cane nutritive valuemust take into account its chemical composition but also the interpersonal differences in the feeding behaviour of theanimals. From this point of view, the ground sugar cane is an interesting raw material which can be used as a generic pattern in the study of the other non conventional raw materials.The second experiment has allowed to measure the effects of asugar cane-based diet (juice or ground sugar) on the growthperformance and carcass traits but also on the quality of the fresh meat and dry-cured ham. This study shows that thegrowth performance and carcass traits vary highly according tothe sugar cane form allowance; the very low performance obtained with the ground sugar cane are in relation with its high fibre content which limits the ingestibility of this raw material and reduces the nutrients and energy digestibility.(cont)
