The use of European-Chinese Youna dams improves the productivity of sows and the quality of meat. A total of 96 European-Chinese crossbred pigs was used to study the effect of boar breed (Defi+ vs Duroc), sex (castrated males vs females), and their interaction on performance and carcass and fresh meat quality. All pigs were sacrificed with an average live weight of 120.7 kg. Each treatment was replicated 6 times, and the experimental unit was formed by 4 animals allocated in a pen. No significant interactions were found. The boar breed did not affect the performance during all the fattening period. Further, Duroc x Youna® pigs showed similar backfat and intramuscular fat than Defi+ x Youna pigs. However, Duroc x Youna pigs had lower trimmed ham, loin, and primal cuts yield and loin area than Defi+ x Youna pigs (P<0.05). Therefore, the use of Defi+ breed was better than the use of Duroc breed for mating European-chinese Youna dams because an increase in primal cuts yield without a decrease in intramuscular fat content was observed.
