Worldwide, per capita consumption of pork reaches 16kg/year, and exceeds the consumption of chicken meat and beef. But the per capita consumption of pork in Brazil in the last two years was about 14kg/year, even Brazil is the fourth largest producer and fourth largest exporter of pork in the world. The survey aimed to interview a number of people and evaluate how frequently they consume pork during the year. the majority of respondents to consume fresh pork once a week, and second is the consumption once every 15 days followed by once a month. This is due to several factors: lack of appropriate and practical products, the existing bias and the lack of an information campaign and appropriate dissemination. The lack of information, ie, the consumer still see the pig being reared in conditions of poor hygiene and believes that the meat is fatty and do harm to health. Another fact is that the product is presented to the retailer does not meet the expectations of consumers, either by format, by volume, lack of practicality and convenience.
