The functional components of rice are focused sharply since human health is now becoming of utmost importance. The specialty rice research has intensively advanced for about twenty years in China. One hundred varieties of specialty rice varieties such as colored rice, aromatic rice and specific purpose rice has been developed and are being distributed in 20 provinces until now. This paper presented the types and distribution of specialty rice, germplasms collection, conservation of specialty rice germplasms, and current researches on functional substance of specialty rice. The specialty rice research in China was reviewed to support the development of value-added rice varieties, to understand the special compounds for nutritional rice for possible future use in human nutrition and to establish milestone in promoting consumption of rice in Korea.
