The objective of this paper was to investigate the effects of genotype, environment and their interaction on wet gluten content in wheat. The highest average value of the trait was found in the cultivar Milica (29.5%) and the lowest in cultivar Nevesinjka (20.7%). Highly significant differences were observed among the cultivars, years and locations. The AMMI analysis showed that the cultivars differed in both the main effect and the interaction. The standpoint varieties were Evropa 90 and Prima, which proved the most stable and had above-average mean values. The cultivar Milica exhibited good stability and had high average values as well. Novi Sad location was emphasized as the environment with stabile variety behaviour and the average values at the level of overall mean.
