The objective of this study were to determine the content of total phenolics, flavonoids, hydroxycinnamoyl tartaric acid esters, anthocyanins, polymeric color and antioxidant activity in fruit extracts of sour cherry (Prunus cerasus) from southern Serbia. The antioxidant activity was evaluated using DPPH* scavenging assays (94.13%). The total phenolics in control samples kept in the dark at 8 deg C were not significantly different from those exposed to the sun light and kept at room temperature during 90 days. These results show that the investigated fruit extract can be used as an easily, accessible source of natural antioxidants and as a possible supplement.
