[The comparative estimation of quality indices of SK-Rus 6 cross broiler meat with regard to the slaughter age]

The comparison estimation of meat quality of SK-Rus 6 cross broilers with regard to the slaughter age has found that the SK-Rus 6 cross broiler meat protein is characterized by high content of amino acids. As to the sum of dispensable and indispensable amino acids the protein of pectoral muscles of 36-day-old chickens is inferior of this index at the age of 38, 39, 42 days. Foot muscles of 36-day old chickens in the amino acid composition exceeded by 11.1% the foot muscles of 38-day-old chickens. The content of polyunsaturated fatty acids in foot muscles of cockerel chicks was higher by 5.79-14.90% than in pectoral muscles, and in female chicks – by 1.85-8.13% lower than in pectoral muscles in the age periods studied. As to the physical indices of meat (juiciness, tenderness) 38-, 39, 42-day old broilers actually are highly competitive with the meat of 36-year old chickens. The analysis of residual heavy metals in muscles and internal organs has shown that the level of mercury, lead, cadmium was much lower than MAC. It can be concluded that carcasses of SK-Rus 6 cross 36-, 38-, 39, 42-day old broilers have high indecices of meat quality
