Influence of breads with use of barley, buckwheat and oat flours and barley flakes on post-prandial glycaemia in patients with type 2 diabetes mellitus

Specialized diabetic mixtures Vita have been developed to make bakery products. They comprised 70% of wheat baker's grade 1 flour for bakery products with barley flour, 30% of wheat flour with buckwheat flour, 50% of medium rye flour and 20% of buckwheat flour – for bakery products with barley flour, 70% of wheat flour and 30% of oat flour – for bakery products with oat flour, 70% of wheat flour and 30% of flaked barley – for bakery products with baked barley. The study involved 20 patients aged 58.5+-2.9 years suffering type 2 pancreatic diabetes. All of them had fatty degeneration; the disease length is 8.7+-1.9 years. The level of glucose in capillary blood on an empty stomach was determined twice in each patient and after 30, 60, 120 and 180 min after the above bakery products are taken in an amount corresponding to 50 g of carbohydrates. To simulate the standard carbohydrate load bread from wheat flour comprising 50 g of carbohydrates was consumed. The highest degustation estimation was received by bakery products with buckwheat flour, the least one – by bakery products with barley flour. The least rise of sugar in blood for 30-120 min was in patients consumed bakery products with barley and buckwheat flours. Bakery products with flaked barley gave higher glycemia than bread from wheat flour and bakery products with oat flour was comparable with that. Glycemic indices of bakery products from barley, buckwheat, oat flours and flaked barley were 55.6, 64.3, 95.4 and 152.6%, respectively. It is concluded it is advisable to add bakery products with barley and buckwheat flours to the rations of patients with pancreatic diabetes
