Determination of sweet cherry cultivars suitable for the processing industry | İşleme sanayine uygun kiraz çeşitlerinin belirlenmesi

In this study, it has been determined that which of 18 types of sweet cherries established from the cherry sort collection located in the orchard of the institute (Sarı, Bella di Pistoia, Karabodur, 0895 Kaman Çayırı, 0847 Geç Kara Kirtik, 0890 Aydın Kirazı, Bigarreau Napoleon, Cemal, Acı Kara, Corum, Abdullah, Bigarreau Jaboulay, Tabanlı, Bademli, Merton Late, Noir de Guben, Elifli, Stark's Gold) are the most suitable for the conservation method within the alcohol and SO2 in order to use in the processing industry and have been protected in the best way. Two different level of SO2 has been applied as 7500 ppm and 5000 ppm in the conservation method with Sulphur dioxide and cherries have been stored for one-year period. With this study; as a result of the modified weighed rankit method carried out in accordance with the criteria specified in selection of the cherry cultivars suitable for the conservation method with sulfur dioxide in the processing industry, Abdullah, Bademli, Noir de Guben, Cemal, Aydın Cherry, Karabodur, Sarı, Bella di Pistoia, Elifli, Stark's Gold, Merton Late, Bigarreau Napoleon, of the cultivars that 7500 ppm SO2 has been applied, and Cemal, Aydın Cherry, Karabodur, Sarı, Bella di Pistoia, Stark's Gold, Merton Late, of the cultivars that 5000 ppm SO2 has been applied, have been found to be the most suitable methods for this conservation method. In the conservation method within the alcohol, cherries have been stored for a period of one year within alcohol of %96. Criteria requested for the priority characteristics of the cultivars have been evaluated in the method of conserving the cherry cultivars within the alcohol. Cultivars that meet all of these features- Kaman Çayırı, Noir de Guben, Tabanlı, Cemal, Karabodur, Sarı, Stark's Gold, Merton Late, Geç Karakırtik- have been found to be the most suitable ones for processing industry.

Bu çalışmada enstitü bahçesinde bulunan kiraz çeşit koleksiyonundan tespit edilen 18 kiraz çeşidinin (Sarı, Bella di Pistoia, Karabodur, 0895 Kaman Çayırı, 0847 Geç Kara Kirtik, 0890 Aydın Kirazı, Bigarreau Napoleon, Cemal, Acı Kara, Corum, Abdullah, Bigarreau Jaboulay, Tabanlı, Bademli, Merton Late, Noir de Guben, Elifli, Stark's Gold) işleme sanayinde kullanmak üzere, alkol ve SO2 içinde muhafaza yöntemine hangisinin en uygun olduğu ve en iyi şekilde korunduğu belirlenmiştir. Kükürt dioksit ile muhafaza yönteminde 7500 ppm ve 5000 ppm olmak üzere iki farklı düzeyde SO2 uygulanarak kirazlar bir yıl süreyle depolanmışlardır. Bu çalışma ile, işleme sanayinde kükürt dioksit ile muhafaza yöntemine uygun kiraz çeşitlerinin seçiminde belirlenen kriterlere göre yapılan değiştirilmiş tartılı derecelendirme sonucunda; 7500 ppm SO2 uygulanan çeşitlerden; Abdullah, Bademli, Noir de Guben, Cemal, Aydın Kirazı, Karabodur, Sarı, Bella di Pistoia, Elifli, Stark's Gold, Merton Late, Bigarreau Napoleon çeşitleri, 5000 ppm SO2 uygulanan çeşitlerden; Cemal, Aydın Kirazı, Karabodur, Sarı, Bella di Pistoia, Stark's Gold, Merton Late çeşitleri bu muhafaza yönteminde işlemeye en uygun çeşitler olarak bulunmuşlardır. Alkol ile muhafaza yönteminde kirazlar, %96'lık alkol içinde bir yıl süreyle depolanmışlardır. Kiraz çeşitlerinin alkol içinde muhafaza yönteminde çeşitlerde öne çıkan özelliklerde istenen kriterler değerlendirilmiştir. Bu özelliklerin tümünü birden sağlayan çeşitler Kaman Çayırı, Noir de Guben, Tabanlı, Cemal, Karabodur, Sarı, Stark's Gold, Merton Late, Geç Karakırtik işleme sanayine en uygun çeşitler olarak bulunmuşlardır.
