Essential oils of spices are to be used as the natural antioxidants for the food storage term prolongation. The research aimed to observe the phenolic and terpenoid content of essential oils, dissolved in water and water-alcohol solution is carried out.The essential oils of Salvia officinalis, Satureja montana, Mentha piperita and some others are analyzed. The dependence of ABTS+ solution optical density variances on carvacrol and timol concentration is shown. Different indexes of essential oils are calculated. The concentration of different essential oils and optical density of the environments are analyzed. The radical scavenger activity of essential oils and their individual components in relation to ABTS+ has been studied. The differences between anti radical activity in water and alcohol-water environments are found. Quantitative characteristics of essential oils radical scavenger activity are shown to correlate with contents of phenolic compounds.
