The current investigation has shown that individual PAHs some other than benzo(a)pyrene are more suitable as single markers or in combinations with other markers in analysis of foodstuff contamination by PAHs. benzo(a)pyrene, chrysene, benz(a)anthracene, cyclopenta(c,d)pyrene occur to be the most perspective a single markers. The obtained results show that combined markers (benz(a)anthracene in combinations with other PAHs) are very perspective substances for toxicity studies. Sum of four individual PAHs (PAH 4) can be a suitable marker for evaluation of polycyclic aromatic hydrocarbon content in different foodstuffs. Maximal acceptable concentration for oil samples could be 30 mg/kg, for smoked meat and smoked fish samples 35mg/kg, and for canned fish samples 70 mg/kg.
