Food quality and safety are not strictly functions of decreasing yields. Storage pests (SP) may to be a direct source of contaminations in the agri-commodities. Contaminants associated with SP divided into three groups: physical, microbial and chemical contaminants. A lot of insects species cause incidence of allergen reaction in human. The SP are the source of the most important group of human allergen proteins. These allergen proteins cause the same group of reaction as other allergen sources, like pollen. Allergen proteins can be inhaled, ingested, absorbed by skin or mucous membranes. So, among the main direct allergen are bio-contaminants i.e. insects, exuviae, larvae or feces. Allergic diseases are common disorder affecting about 40% of human populations. In the sensitive human group, allergenic reactions may appear during ingesting bio-contaminated flour products.
