This study reports on the isolation and identification of Proteus sp. in milk powder, the major raw material in the production of most confectionery products. Biochemical and morphological characteristics of the genus are also presented. A number of different culture media were employed to identify and determine biochemical and morphological characteristics of Proteus sp. Microbiological analysis of a strain of Proteus sp., isolated a few years ago and maintained as the reference strain, showed that the strain analyzed appeared to have evolved.
