The quality of a fat base (FB) biscuit of shortcakes (SC), fried potato chips from a natural (PC) and crackers (PC) of industrial production, as well as assess their impact on biological characteristics and histology of internal organs of laboratory rats was studied . The results of chemicophysical studies showed that the most intense accumulation of free fatty acids occured in the fat extracted from the PC. Acidity of FB of PC and SC were within the norms. The highest content of hydroperoxides in the extracted fat was observed in the PC. Peroxide number of FB of PC and SC were within the established norms. The content of a total number of secondary oxidation products exceeded the norms of 1% in 1.5-3.5 times in FB of the all investigated products. The control group of rats. received the usual diet for 40 days, the 1 experimental group did part of the daily ration replaced by PC, the 2 group - SC, the 3 group - PC. In all experimental groups of animals deteriorated outer coat, hair lost its shine and smoothness. Histological studies revealed changes in liver (L) andthe small intestine (SI) tissues. In 1 group a diffuse, granular, and focal fatty degeneration was observed, that leaded to the subsequent development of cirrhotic changes in the drive, in SI - mucosal edema, lymphoid infiltration and fragmentation of glands of the mucous membrane. In group 2 noted the presence of focal, granular degeneration and congestion in the drive, in the current - mucosal edema, perivascular edema, lymphoid infiltration of the glands. In group 3 revealed lobular granular degeneration of the drive, blennenteritis current edema and lymphoid infiltration of the intestinal wall. Цель работы – исследование качества жировой основы (ЖО) сдобного песочного печенья (СПП), обжаренных во фритюре чипсов из натурального картофеля (КЧ) и сухариков (СХ) промышленного производства, а также оценка их влияния на биологические характеристики и гистологическую картину внутренних органов подопытных крыс. По результатам физико-химических исследований видно, что наиболее интенсивное накопление свободных жирных кислот происходит в жире, экстрагированном из СХ. Показатели кислотного числа ЖО КЧ и СПП находятся в пределах норм. Наибольшее содержание гидропероксидов в экстрагированном жире наблюдается в КЧ. Перекисное число ЖО СХ и СПП – в пределах установленных норм. Содержание суммарного количества вторичных продуктов окисления превышает норму 1% в 1,5-3,5 раза в ЖО всех исследуемых продуктов. Контрольная группы крыс в течение 40 дн. получала привычный рацион питания, у 1-й опытной гр. часть дневного рациона была заменена КЧ, у 2-й гр. – СПП, у 3-й гр. – СХ. У всех опытных групп животных произошло ухудшение внешнего волосяного покрова, шерсть потеряла блеск и гладкость. Гистологические исследования выявили изменения в тканях печени (ПЧ) и тонкого отдела кишечника (ТОК). В гр. 1 наблюдалась диффузная, зернистая и очаговая жировая дистрофия, приводящая к последующему развитию цирротических изменений ПЧ, в ТОК - отек слизистой оболочки, лимфоидная инфильтрация и фрагментация желез слизистой оболочки. В гр. 2 отмечено наличие очаговой, зернистой дистрофии и гиперемии в ПЧ, в ТОК – отек слизистой оболочки, периваскулярные отеки, лимфоидная инфильтрация желез. В гр. 3 выявлена зернистая очаговая дистрофия ПЧ, катаральный энтерит ТОК, отек и лимфоидная инфильтрация стенки кишечника. Сделан вывод о неудовлетворительном качестве исследованных изделий и их негативном воздействии на организм при длительном потреблении
