From the obtained results it can be concluded that: - The nitrate, nitrite and betaine content is different depending on the beetroot sort. - During the storage, the nitrate content was reduced at all beetroot sorts, and nitrits content was significantly increased (about 100%), as the result of nitrate reduction. - This high increase of nitrite, in spite of three-month storage is lower than the toxic doses noted in the literature. - Further work on this problem is necessary (concerning the storage conditions) because beet is becoming more important in human nutrition.
