Carcass evaluation studies at the Sugarcane Feeds Centre.

Holstein and buffalo steers were 'finished' on a diet of varying levels of sugar cane (20 to 50 % of dry matter) and the effects on carcass quality evaluated in terms of dressing percentage (DP) and rib-eye area (RE). Decreasing the level of sugar cane, i.e. lowering fibre content, lowered the carcass quality of Holstein steers (reduction in DP and RE) due to increase in pelvic fat which is removed at dressing. The DP's of buffaloes at 50 % sugar cane were comparable with the Holsteins'. Preliminary recommendations are as follows: market animals at 400-420 kg liveweight; end the practice of routine castration and increase the fibre content of diets of animals approaching full maturity. With larger animals high levels of performance may be attained with 50-60 % cane without energy supplements.
