Tofu, an Oriental food product, is described and recipes are provided. Tofu is the bland-tasting, soft, white textureless curd of soybean milk. It absorbs flavors of other foods when cooked, is easily digested, and is produced much the same way as cheese. It is high in protein, low in calories (8 oz contains 147 calories), and low in saturated fat and cholesterol. Tofu is perishable (storage instructions are given) and versatile (use your imagination). Recipes for Green Goddess dressing and Tofu Spinach Quiche are given. (kbc).
