Selection of fungi for protein enrichment of carbohydrate agricultural wastes.

Conversion of carbohydrate agricultural wastes into proteins which are abundant in the tropical countries would provide an economic alternative to waste treatment. Cassava meat, cassava peeling, banana meat and banana peeling which are unfit for consumption were used as substrates in the solid state fermentation. Isolates of Aspergillus sp. and Trichoderma sp. from different sources were screened for protein enrichment of these substrates. Results showed Aspergillus sp. gave high activity of bioconversion in cassava meat, while Trichoderma sp. was preferred for banana meat. The protein contents in the fermented cassava and banana meats were 33 percent and 14.6 percent, respectively. For cassava and banana peelings as substrates, Trichoderma strains showed higher bioconversion-activities of carbohydrates into protein as compared to Aspergillus strains. T. harzianum was able to enrich initial protein content of cassava peeling to 31.1 percent after 5 days of fermentation. Meanwhile, T. viride converted banana peeling to 12.4 percent protein content after 3 days of fermentation at 30 deg C.
