The paper studies a new fast, direct method for determination of total polyphenols in extracts and olive brines. It utilizes the absorption maximum at 278 nm that is attributed to the cited polyphenols and uses the 2nd derivative of the spectrum for the measurement. Pyrocatechin is the most appropiate substance within studied standards. Changes of the pH, within the acid zone, or heating the samples to boiling temperature had no practical influence on the results. Possible interferences of other substances present in the same solutions are negligible.
