Bioavailability of iron in iron-fortified fluid milk.

Rat bioassay was used to measure iron bioavailability in samples of cow's milk fortified with a citrate phosphate iron complex (16.67% iron). Fortification with this iron source increased milk iron content from 1 to 38 ppm. Hemoglobin levels in iron-depleted rats fed low-iron, ferrous sulfate-fortified, or milk diets indicated that iron absorption from the fortified milk was comparable to that from ferrous sulfate (99% and 100%, respectively). Thus, the milk's components did not impair the bioavailability of iron in the iron complex. (nm).
