The anthocyanins from four varieties of olives (Koroneiki, Megaritiki, Kalamon and Manaki) which are cultivated in Greece were identified. Paper chromatography, gas chromatography, spectrophotometry in the visible and U.V. region of spectrum and standard chemical determinations were employed in these studies. The results of these experiments indicated that the varieties of Koroneiki and Megaritiki contain only the anthocyanin delphinidin-3-rhamnoglucoside-7-xyloside, the variety of Kalamon the anthocyanins cyanidin-3-glucoside, cyanidin-3-rutinoside and delphinidin-3-rhamnoglucoside-7-xyloside and the variety of Manaki the anthocyanins cyanidin-3-rutinoside and delphinidin-3-rhamnoglycoside-7-xyloside. The anthocyanin delphinidin-3-rhamnoglucoside-7-xyloside was identified for first time in olives.
