In the last years a niche market for seed oils prepared only by mechanical pressure for a direct human consumption is existing and developing in Italy and, peculiarly, in the Northern European Countries. Nevertheless sufficiently clear and univocal standards have not yet matched this market developing; actually we can observe a number of initiatives and attempts of marketing classifications which, in most cases, are opinable. This work is divided in two sections: the first one is devoted to the characterization of some national and international market products by means of their chemical analysis and to a critical evaluation of the description reported in the bottle labels; the second one is devoted to the preparation of soybean, sunflower, corn oils of sure genuineness according to two different pressing technologies. In these cases productions yields and composition characteristics were evaluated depending on the adopted technology and the operating conditions. The collected results evidenced that not all the market products, according to their analytical characteristics, may be declared "oils obtained by simple pressing". The analysis of the genuine samples evidenced too the parameters which must be adopted for a complete characterization of these products. Then, in the final part, some marketing and standardization actions are proposed according to the acquired experience.
