Since the forties the systematic studies on chemical and technological variety testing of traditional fruit and vegetable crops and then wild and introduced ones have been started. The extended study of biologically-active substances and their changes in the process of conservation was carried out. New kinds of conserved production with the increased content of biologically active substances are worked out. The studies on fruit and berry wine-making were started at the Byelorussian Research Institute of Food Industry in 1938. Combined research carried out in 1950-1983 provided the opportunity to work out original technologies for production of sparkling apple wine and ciders.
