El vino es el resultado de un conjunto de operaciones, conocidas como vinificacion, destinadas a la transformacion del mosto de uva, siendo la fermentacion una de las mas importantes. De acuerdo al sistema de vinificacion aplicado se obtienen vinos con diferentes caracteristicas. Los sistemas especiales tratan de obtener buenos vinos simplificando y racionalizando las operaciones inherentes al proceso. El presente trabajo tiene por objeto analizar las caracteristicas de la vinificacion en tinto, blanco y rosado, y las transformaciones que sufren los componentes de la uva durante el proceso.

Wine is the result of several operations, known as vinification, which are destined to the must of the grape transformation, being the fermentation one of the most important ones. There are many vinification systems through which wine is obtained with different characteristics. The special systems try to get good wines by simplifying and rationalizing the operations concerning to the procedure. The aim of this task is to analyzed the vinification characteristics of red, white and rose wines, and the transformation suffered by the grape constituents.
