Sanitizers affect chemical compositions and physical characteristics of few-flower wild rices under modified atmosphere packaging

The influence of different sanitizers on nutritional composition and lignification of sliced few-flower wildrice(Zizania latifolia Turcz.) was investigated. Wildrice slices washed with 100 mg/L chlorine dioxide(ClO2), 50 mg/L hydrogen peroxide(H2O2) and 80 mg/L peroxyacetic acid(PAA) were packed in micro perforated polyethylene film for 21 d at 2 deg C. Microbial growth, gas composition, soluble solids content(SSC), pH, whiteness index(WI), vitamin C, phenols, firmness and lignin were determined every 7 d. Compared with water washing, three sanitizers inhibited microbial growth and browning, delayed lignification, and maintained tenderness of few-flower wildrice. ClO2 was superior to other sanitizers in reducing microbial population and respiration activity, but caused significant SSC loss and lignification. PAA treatment retained better texture, higher vitamin C and phenol content than H2O2, but did not significantly affect microbial growth, WI ang lignin. Data suggested that PAA washing pretreatment has more potential to keep the quality of fresh-cut few-flower wildrice.
