Influence of lard heat treatment on changes in the content of cholesterol and formation of cholesterol oxidation products

The aim of this study has been to determine the influence of high temperature (150degree C) and layer thickness of lard used upon changes in the content of cholesterol and formation of cholesterol oxidation products (COPs). It was found that heat treatment in a thin layer of lard was characterised by a more intensive degradation and thermal oxidation of sterols in comparison to heating a thick layer of lard. A decline of cholesterol in the analysed lard has been noted along progressing heat treatment which equaled to 7.6 percent for thin lard layer (3 mm) and 4.3percent for thick lard layer (10 mm). The content of cholesterol oxidation products during heat treatment, which lasted from 0 to 120 min, was very differentiated and in the case of a thin lard layer it ranged from 1.5 to 10.4 mug/g, and in the case of a thick lard layer from 1.5 to 8.9 mug/g.

Celem pracy bylo okreslenie wplywu dzialania podwyzszonej temperatury (150 st.C) oraz zastosowanej grubosci warstwy smalcu na zmiany zawartosci cholesterolu oraz tworzenie sie produktow utleniania cholesterolu. Stwierdzono, ze obrobka termiczna w plytkiej warstwie smalcu charakteryzowala sie bardziej intensywna degradacja i oksydacja termiczna steroli w porownaniu z ogrzewaniem glebokiej warstwy. Wraz z wydluzaniem sie czasu obrobki termicznej stwierdzono ubytek cholesterolu w badanym smalcu, ktory wynosil dla plytkiej warstwy smalcu (3 mm) - 7,6 proc., a dla glebokiej warstwy (10 mm) - 4,3 proc. Zawartosc produktow utleniania cholesterolu podczas ogrzewania trwajacego 0-120 minut byla bardzo zroznicowana. W wypadku ogrzewania plytkiej warstwy tluszczu zawierala sie w przedziale od 1,5-10,4 mikrog/g, a glebokiej warstwy smalcu od 1,5 do 8,9 mikrog/g.
