In this paper we investigate the possibility of production of new, composite biodegradable films based on pumpkin oil protein isolates and chitosan, with or without transglutaminase as crosslinking agents. Production of new films has enabled the shift of production from the extreme acid and alkaline conditions to the mild conditions (pH 4-7), suitable for potential application as coatings for food. The obtained composite films have characteristics similar to existing composites based on chitosan and protein, obtained with or in the absence of transglutaminase.
