Since the 1983s, when the SP Laboratory has been founded, it has been involved in the vegetable fat and oil quality control. In Serbia, the vegetable fat and oil quality is defined in the Regulations on quality and other requirements for edible vegetable oils and fats, margarine and other fat spreads, mayonnaise and related products (Official Gazette No. 23/2006). Within this work, the quality of vegetable oil and fat used in frying has been analyzed, as well as the changes this process is causing. Sunflower oil is traditionally used for the frying process and lately, the market offers vegetable fats, oils and margarines specially aimed at the usage in frying.
