anglais. In this thesis, process variables in Beta-galactosidase production by Kluyveromyces were investigated and Beta-galactosidase production was optimized by using Response Surface Methodology. In the first part of the thesis, production and optimization of Beta-galactosidase enzyme using synthetic medium by Kluyveromyces lactis NRRL Y-8279 in shake flask cultures were investigated.
