Effects of added exogenous inositol on the content of dissociative metal ion in malting barley | 外加肌醇对制麦过程中游离态金属离子含量的影响

chinois. 研究在大麦发芽过程中添加外源肌醇对游离态金属离子含量的影响,为制定更加合理的制麦工艺提供依据。以大麦“schooner”为供试材料,运用电感耦合等离子体原子发射光谱法(ICP-AES),考察外源添加肌醇大麦发芽过程中游离态Ca2+、Mg2+、Zn2+、K+、Na+含量的变化。添加外源肌醇能提高发芽过程中游离态金属离子的含量,Ca2+、Mg2+、Zn2+、K+、Na+含量最大值与对照相比分别可提高7.5%,4.2%,30.3%,9.8%和7.9%。肌醇能促进大麦发芽过程中金属离子的释放,提高游离态金属离子含量。

Effects of adding inositol in the germination process on the content of dissociative metal were investigated to provide information for developing a more reasonable malting process. Using barley “schooner” as the experimental medium, Inductively Coupled Plasma Atomic Emission Spectrometry (ICP-AES) was adopted for studying the content changes of dissociative metal ions Ca2+, Mg2+, Zn2+, K+, and Na+ under the influence of inositol additives in the barley sprout process. We found that adding exogenous inositol could improve the contents of the dissociative metal ions in the germination process. Compared to the control group, the largest content of Ca2+, Mg2+, Zn2+, K+, and Na+ could be increased by 7.5%, 4.2%, 30.3%, 9.8% and 7.9%, respectively. The inositol can promote the release of metal ions in barley germination process and improve the content of free metal ions.
