Assessing the quality of honey produced by selected beekeepers in Cebu [Philippines]

Of the 25 beekeepers provided with honey containers, only 18 beekeepers were able to submit honey samples. Overall findings revealed that the honey produced by beekeepers in Cebu was good for consumption. Results showed that the reducing sugars were within the International Quality Standards and had the following ranges: fructose range from 32.7 to 37.5 g/100g, glucose from 23.0 to 32.3 g/100g, turanose from 1.1 to 2.9g/100g, and maltose had a range of 1.8-4.3 g/100g. Out of the 18 honey samples, majority had a moisture content (MC) below 20% while 16.67% was high in moisture content. Likewise, 16.67% were high in proline content, 50% in hydromethylfurfural content, and 33.67% in electrical conductivity. Moreover, the samples had an average MC of 19.47%, proline content of 572.77 mg/kg, hydroxymethylfurfural of 41.42 mg/kg, and conductivity of 813.61 mg/kg. The ash content was found to be within the normal limit with an average of 0.25 g/100g. However, the honey was acidic with an average value of 4.01. Generally the amount of MC, electrical conductivity, and pH value corresponded to the legal regulation (Honey Directive 2001/110/EC from Dec 20, 2001).
