Comparison of some Properties of Halloumi cheese made in Turkey and Turkish Republic of Northern Cyprus | Türkiye'de ve Kuzey Kıbrıs Türk Cumhuriyeti'nde üretilen Hellim peynirlerinin bazı özelliklerinin karşılaştırılması

In this study which was made to compare some quality properties of Halloumi cheese produced in Turkey and the TRNC (Turkish Republic of Northern Cyprus), the chemical and microbiological analysis and free fatty acid compositions of Halloumi cheeses were investigated collected from markets. While the different between the lactic acid %, fat and total solid values of Halloumi cheese samples produced in their countries were determined to be as a significant (p0.05), pH values were found to be very important (P0.01). In addition, salt, total nitrogen, water soluble nitrogen and ripening index values were no differences. While in fatty acids composition of samples were not detected a different as statistical, but the difference between the values of myristic acid was found significant at 00.05 level. According to the results of microbiological analysis of samples collected from Turkey showed a higher bacterial load. While E. coli count of Halloumi cheese produced in TRNC was encountered, this bacterium was determined in 73% of cheese collected from Turkey. The results of microbiological analysis of the difference between cheeses collected from the two countries were found significantly (P 0.01).

Türkiye ve KKTC (Kuzey Kıbrıs Türk Cumhuriyeti)'de üretilen Hellim peynirlerinin bazı kalite özelliklerini karşılaştırmak amacıyla yapılan bu çalışmada, piyasadan alınan peynir örneklerinin mikrobiyolojik ve kimyasal özellikleri ile serbest yağ asitleri kompozisyonu incelenmiştir. Türkiye ve KKTC'de üretilen Hellim peyniri örneklerinin % laktik asit, yağ ve kurumadde değerleri arasındaki fark önemli (p0.05), pH ise çok önemli (p0.01) bulunmuştur. Tuz, toplam azot, suda eriyen azot ve olgunlaşma katsayısı değerlerinde ise önemli (P0.05) bir farka rastlanmamıştır. Örneklerin yağ asidi kompozisyonunda istatistiki açıdan bir fark (P0.05) belirlenmezken, sadece miristik asit değeri bakımından farkın p0.01 düzeyinde önemli olduğu saptanmıştır. Mikrobiyolojik analiz sonuçlarında Türkiye'den toplanan örneklerde bakteri yükünün daha yüksek olduğu tespit edilmiştir. KKTC Hellim peynirlerinde E. coli'ye rastlanmazken, Türkiye'den toplanan peynirlerin % 73'ünde bu bakterinin mevcut olduğu belirlenmiştir. Her iki ülkeden elde edilen peynirlerin mikrobiyolojik analiz sonuçları arasındaki farkın önemli olduğu belirlenmiştir (P0.01).
